ZOODLES! Noodles made with vegetables.

I eat a TON of veggies. I mean a TON. So making them more interesting is definitely key.
I love preparing them in fun ways.
Mostly I eat quite plain.
I keep things simple because of time and in my programs I know that women love to have something that is fast, simple AND nutritious & delicious!
I know you are busy too and these are fast! The great thing is – you can eat them raw!
And…YES you can also cook them.
Some examples of vegetables you can use to make the zoodles are:
Zucchini, various kinds of squash (prefer to cook these after made into noodles), cucumber, daikon, carrots, beets, parsnips, jicama, Kohlrabi and turnips. You may be able to think of more.
Below are pictures of a couple of tools you can use to make these noodles – a Veggetti and a Spiralizer. I have them both but the one that is super fast and easy and small – is the Veggetti. But both are great.
You can add any kind of sauce or salad dressing on these. Depends on what they are made of – as you want the flavours to match.
I add zoodles to salads or I make make a batch using a few vegetables and have that as my salad with a few other veggies.
Below I give you a recipe for a ZOODLE SALAD – using zucchini and carrots and a few other ingredients with a great avocado dressing.

ZOODLE SALAD WITH AVOCADO DRESSING
- 1 Zucchini (yelllow or green or both)
- 1-2 larger Carrots
- 1 bunch of Cilantro (or parsley if you don’t like cilantro)
- 3 Green onions
Avocado Chilli Dressing:
- 1 small avocado
- 3 Tbsp oil
- 1/3 C water
- ½ small clove of garlic (use amount you want or use garlic powder)
- ¼ tsp onion powder (or use fresh onion)
- ½ Tbsp chili powder
- ½ tsp paprika
- ¼ C lime juice (lemon is fine too)
- Salt and pepper to taste
Blend ingredients in a blender
Putting it all together:
Wash the veggies and peel them (or you can just wash them)
Wash cilantro and wrap in paper towel to dry. Take off long stems and chop the cilantro.
Make the noodles (as I do in the video) and then place them on paper towel and cover with another one (or use cotton towels).
Cut green onions. In a larger bowl add the veggie noodles, and green onions.
NOTE: If you are not going to eat all of this then do not put dressing on all of it at once. Make a smaller bowl of what you want to eat and then put the dressing on that.
Add the avocado dressing and with your hands or a large spoon – stir, mix and make sure all the zoodles are covered with the dressing. Then add the chopped cilantro and stir to mix.
The great thing is that you can use your creativity and make some amazing, colourful dishes with this!
