Curry Yam Peanut Butter Soup & “I don’t have time”

A savoury, super creamy, warming soup! Yams, ginger, carrots, peanut butter, onions, garlic and warming spices give this soup its fantastic flavour.

This soup is great on it's own or add some quinoa for more texture and protein! Quinoa is also anti-viral, anti-cancer and has anti-depressant effects.

I think this would also be great over broccoli and cauliflower – like a sauce.

I love dipping my buckwheat wraps into this soup – like you would be pita or naan bread. Here is the Video recipe for those CLICK HERE.

CURRY YAM PEANUT BUTTER SOUP

  • 3 cloves of garlic chopped (about 1 Tbsp)
  • 1/4 C + a bit chopped fresh ginger root (peeled)
  • 1/2 C chopped onion
  • 4 C chopped yams (peeled)
  • 1 C chopped carrots
  • 1 Bay leaf
  • 5 C water
  • 1 can coconut milk
  • 1/2 tsp cumin
  • 2 tsp curry powder
  • 1/4 tsp pepper
  • 1 tsp Himalayan (or sea) salt (add more to taste it if needs it)
  • Dash of cayenne
  • Dash of cinnamon
  • 1/4 C all natural peanut butter

Add oil (grape seed, sunflower, avocado or coconut) to a soup pan and heat (3-4 Tbsp)

Add the garlic, ginger and onions. Saute for about 5-7 minutes.

Add the yams, carrots and about 2 C of the water.

Cover with lid and bring to boil

Add the spices and the rest of the water.

Bring to boil. Turn down to medium boil and keep lid off. Let this cook until yams and carrots are tender to soft – turn down heat to simmer.

Add the peanut butter and coconut milk. Stir often and heat all the way through.

Take off heat. Let cool a bit.

Then add some to blender and blend until smooth. So this with all of the soup.

NOTE;  DO NOT too much hot soup to a blender as it will spill (kind of explode) over

Stop and take a minute – think about that.

Really?

What is taking up all your time?

Does what you are spending your time on contribute to you being healthy & happy?

YES or NO? (no explaining, no excuses – just answer yes or no)

If not – why the heck are you spending all your time doing that?

Why?

Why would you choose to spend time on things that actually leave you stressed, sick, tired and even exhausted?

Why would you spend time doing things that do not bring you joy? That do not fulfill you?

Why are you avoiding taking care of  YOU?

Why are you allowing others to dictate your life?

Would your kids, spouse, friends and family be ok with you getting sick, crashing, burning out, being unhappy, unfulfilled, tired and even depressed?

What do you think?

It's time to think about this and work on changing things so you DO HAVE TIME.
