Veggie Seed Pate

I just love this VEGGIE SEED PATE!

Pate is light, fresh, delicious and filling!

It is PERFECT in a lettuce or collard wrap, rice wrap, on crackers, on bread and celery sticks.

Health Benefits: This pate is full of fibre, magnesium, selenium, zinc, Vit E and even protein. The seeds are sprouted (soaked) so they are easy to digest and the nutrients are more bioavailable so we get all the amazing nutrients contained in the pumpkin and sunflower seeds.

Veggie Seed Pate

  • 1/2 C pumpkin seeds
  • 1/2 C sunflower seeds
  • 1/2 C chopped carrots
  • 1/2 C chopped celery
  • 1/2 C chopped bell pepper
  • 1/4 C chopped parsley
  • 2 green onions chopped
  • 1/2 clove garlic
  • 3/4 tsp Italian spice mix (or any spices you wish)
  • 2 Tbsp lemon juice
  • 1 1/2 Tbsp nutritional yeast
  • Salt & pepper to taste

Add the pumpkin, sunflower seeds, onions and garlic into the food processor and pulse until broken down a bit. You have to stop and scrape sides often.

Add the veggies and process, stopping often and scraping sides and stirring mixture.

Add the parsley, spices and lemon juice.

Continue to process, stirring often, until the texture you want.

Taste and adjust to taste.

 

If you have decreased meat (or given it up) and are eating way less “starchy” foods – then these pates are truly amazing and much needed.
