I am so happy to be back to doing “how-to” recipes and in this video I show you how to easily make a vegan raw pasta (zucchini) with a simple marinara sauce. Fast and easy – perfect right?
Zucchini does tend to work the best for the pasta but you can also add other root veggies along with the zucchini – such as carrots, daikon, cucumber, long beets. I have also used a yam but Have lightly cooked the yam after I made it into noodles.
You can also eat these noodles room temperature and raw or you can heat them up. Same with the sauce, you can have the sauce room temperature or warmed.
As I say in the video I think the zucchini would be great sauteed with garlic and oil and then the marinara added until all warm. That would be another way to serve this.
The marinara sauce is very simple. I didn't really measure and as long as you start with a little and then add more to taste – then you will be good. You do not have to be exact.
VIDEO – Veggie Noodles Made With a Veggetti
- 1 C grape, cherry or roma tomatoes
- 3-4 basil leaves (up to you how much you want)
- Salt & pepper to taste
- About 1 Tbsp nutritional yeast
- About 1/4 – 1/2 tsp dried oregano (or use fresh)
- 1/4 clove of garlic (start with less, add more if you want)
- Pinch of cayenne
Add ingredients to a blender or food process and blend until the texture you like. I tend to like it a little chunky.
There are so many ways to prepare healthier versions of comfort foods and high calorie foods that you love. You don't have to give up all the foods you love. But if you do want more energy and to stop the mid-life weight gain, then finding healthy, nutrient dense, low calorie alternatives to your favourite comfort foods and recipes – is the key!
