A Creamy Delicious Onion Dip

An Oh So Delicious Onion Dip

Growing up in the 70's there were always lots of house parties at my parents and at my aunt and uncles places. That was just so common then.

Appetizers were everywhere. One of the things I used to really love was potato chips and onion dip! Yum.

Made with sour cream and onion soup mix!!  Who remembers that?

Well, now I wouldn't touch that with a ten-foot pole as the Lipton Onion Soup Mix (the powder stuff) has MSG and so much other crap in it – not to mention a ton of salt!

So when I made this it brought back those memories. Food really does help us remember…..

I for sure made this much healthier and my mom did not add veggies to hear onion dip – but for me, I always find ways to add more veggies into my day.

This dip is good in so many things and can be enjoyed in so many ways.

I combined cashews, sunflower seeds and hemp seeds. It would actually last a bit longer without the use of sunflower seeds (they tend to make it a big grey and runnier) but cashews are really not that healthy and sunflower seeds are healthier and less pricey so I like adding them.

At the same time I made some Green Onion Cakes (video and recipe on how-to make CLICK HERE).

These green onion cakes (you can make without the onions) are a quick and easy thing to make and you can stuff them with so many delicious sprouts, greens and veggies.

Below is picture of the onion dip and the green onion cake.

I added some of the onion dip on to the onion cake and then added chopped tomatoes, cucumber slices and some sprouts (if you don't have sprouts add some chopped lettuce or spinach).

You can really stuff them with anything. (Recipe for onion dip below)

1/3 C raw cashews (soak 2 hours, drain, rinse)
1/4 C sunflower seeds (soak at least 2 hours, drain, rinse)
1 Tbsp hemp seeds
1/4 C chopped onions
1/4 clove (or to taste) fresh garlic
1/3 C + 1 Tbsp water
1 Tbsp + 1 tsp apple cider vinegar
Salt and pepper to taste

Blend in high speed blender or it may work in a small food processor.

Once it is blended, add the mixture to a bowl.

To the bowl fold in:

1/2 C chopped parsley
2 stalk of celery chopped
3-4 Tbsp shredded carrots

Stir that into the dip mixture
Sprinkle with paprika

Enjoy the recipe!

Wishing you,

Health & Happiness!
