Kale Noodle Salad & Trying to change someone

Kale noodle salad

This made this salad last night (the picture could be better…..)

I have never combined a kale salad with rice noodles but it's really good!

(Below the recipe is a video in which I talk about how when you decide to change your eating – eat healthier – and you want that for your family too and your spouse. So you set out to get everyone liking healthy food. But…..they resist, they are not ready to change…..So what do you do?)



  • 3 C chopped kale
  • 2 C chopped cabbage
  • 1 1/4 C cooked vermicelli rice noodles
  • 1/2 – 1 C chopped tomatoes
  • Sesame seeds or hemp seeds to top 


  • 1/4 C extra virgin olive oil
  • 3 Tbsp apple cider vinegar
  • 1 1/2 tsp finely chopped ginger
  • 1/2 clove of garlic (amount is up to you)

Add above dressing ingredients into a small blender and blend until smooth. If you are not using blender, grate the ginger and garlic and whisk ingredients in a deep bowl or add to jar and shake.

Making the Salad:

  • De-stem and wash kale. Spin in salad spinner to dry a bit (or wrap in towel)
  • Chop kale and cabbage
  • Add kale and cabbage to a larger bowl
  • Pour some of the dressing on it and massage in with your hands
  • Add the cooked (and cooled) rice noodles and tomatoes
  • Stir to mix
  • Sprinkle with hemp seeds or sesame seeds
  • Add more dressing as needed


NOTE:  For rice noodles: After they are cooked (only take about 5 minutes). Pour them into a strainer, rinse with cold water and let them sit and drain. Shake to release excess moisture. Take a knife and fork and cut them into smaller pieces (this helps them to mix better in the salad)



You are ready to clean up your eating. You are excited, you are pumped….this time you are going to stick to it! You have told people, you have planned, you have cleaned out your cupboards. You love your spouse and family so you are planning to get them on board with you to. Yes, they will see how excited you are, they will support you and they will learn to like the food. Right? Hmmm……are they ready?

Taking on changes within yourself if hard, but taking on responsibility for other people – that is too much and will set you up for failure.
