Simple Hummus with Artichokes (video recipe)

Hummus is fantastic! It is so versatile and the perfect snack!

What I did in this simple recipe is I added some chopped artichokes (which I love!).

I also have a recipe on my blog where I added avocado to the hummus. That is fantastic also.

I made this with my Vitamix. I find it so easy this way.

You can use a food processor. I tend to like my hummus a bit lighter – and when I use my Vitamix I add a bit of water so it does make it lighter.

If you are cutting back on oil a bit, then feel free to use more water and less oil and add more artichokes.

I love eating hummus on veggie sticks, seedy crackers, as a salad dressing (I just thin it out) and even added to sautéed greens making a creamy delicious sauce.

HUMMUS WITH ARTICHOKES

3 Tbsp of water
1 can of organic chickpeas (drain and rinse)
3 Tbsp tahini
1 clove of garlic
2 Tbsp + 2 tsp lemon juice
1/4 – 1/2 tsp paprika
1/2 – 3/4 tsp cumin (go by taste)
2 1/2 extra virgin olive oil
1/2 tsp salt (or to taste)
2-3 artichokes (optional, but good)

  • Add water in blender
  • Then add chickpeas and other ingredients
  • Use the tamper and a lower speed to start
  • Blend for a bit
  • Taste and adjust ingredients to taste
  • Chop the artichokes and add
  • Blend until consistency you want

I usually don’t measure so when I had to making the video it took just a bit longer. 

But when you get used to making this – no need to be exact with the measurements.
