Fast, Easy, Nutritious Soups!
After doing the 3 Day Juice & Smoothie Cleanse I wanted to continue with the healthy, higher raw foods and so I made these two soups!
I have not made a raw soup for a very long time and now I am once again inspired to do more. YES, even in the winter.
The Carrot Coconut soup is not all raw and can be heated. But it is also great at room temperature also.
All these require is a bit of chopping and then a quick blend and they are done!
These soups are PERFECT for when you get home from work and are tired, don't feel like cooking but want to keep it healthy.

This way you can really see how fast and easy they are to make.

CARROT COCONUT SOUP
½ C coconut milk
1/3 C almond milk
½ C chopped carrots
¼ C chopped celery
2 tsp finely chopped ginger
2 tsp lemon juice (or lime, or both)
¼ tsp salt
Pepper to taste
¼ + 1/8 tsp turmeric
¼ + 1/8 tsp cumin
Sriracha, cayenne or red pepper flakes to taste or even a bit of Jalepeno
Add ingredients to a high speed blender and blend until smooth.
You can add some cilantro, parsley, sprouts, chopped cucumber and/or chopped avocado to soup once you dish it up.
If you are going to eat it warm, blend it first and then heat.

TOMATO SPINACH RAW SOUP
½ C tomatoes
¼ C celery
¼ C cucumber
1-2 tsp chopped garlic
1 tsp finely chopped fresh ginger
1 green onion (or 1 small green onion)
¾ C spinach leaves
1/4 – 1/2 tsp salt
Pepper to taste
Sriracha sauce, cayenne or red pepper flakes to taste
½ C water (add more if needed)
Add ingredients to a high speed blender and blend.

This one is best raw. I am seeing how it is tomorrow – put some in the fridge. I am guessing better the same day.
