Chickpea Cauliflower Salad with Tahini Turmeric Dressing

This salad is more like a meal and it is packed full of nutrients!

I decided to blanch the broccoli & cauliflower but you could use them raw. 

(Video below on the step-by-step process of eating healthy – where to start and how to implement things so that it is DOABLE for you and so you don't give up or get frustrated)

This salad has simple ingredients and if you do blanch a large amount of broccoli and cauliflower then you can use some in this salad as well as using it in a hot dish (by heating it up).

If it is cooked and ready in the fridge – you will have something to eating during the week.

You can also use it in any other kind of salad you have that week.

So be prepared! Make some veggies. Cut up some veggies and keep raw in a fridge container to add to a salad or a stir fry. 

When you are prepared, healthy eating is simple!

RECIPE

Chickpea Cauliflower Salad with Tahini Turmeric Dressing

Salad

  • 1 can of organic chickpeas
  • Chopped broccoli (amount does not matter, that is up to you)
  • Chopped cauliflower
  • Chopped green onions

Tahini Turmeric Dressing

  • 2 Tbsp tahini
  • 2 Tbsp lemon juice
  • 2 Tbsp water
  • 1/8 tsp cumin
  • 1 1/2 – 2 tsp nutritional yeast
  • 1/8 – 1/4 tsp turmeric (start with less and add to taste)
  • Salt (to taste)
  • Pepper (to taste)

For salad:
– Empty can of chickpeas into colander and rinse
– Blanch broccoli and cauliflower (or steam for a short time)
– To blanch: Boil water in a pot, add veggies and let cook for about 1-2 minutes
– Take out and let cool or rinse with very cold water”
– Add chickpeas, green onions, broccoli & cauliflower (the amount you want to use for this salad) to a salad bowl and mix

Dressing:
– Add dressing ingredients into a jar, add lid and shake until mixed. Taste and adjust to taste.
– Or add ingredients to a small, deep bowl and stir until creamy.

Add dressing to salad. 
This salad will store in fridge for a few days (with the dressing on it).

It should be doable and something you can maintain. If you try too much too fast – you will probably get frustrated and even give up.
