Carrot Ribbon Salad with Creamy Nut Butter Curry Sauce

I was never one to like pasta. I know a lot of people do. That is something that some women say they really miss when they realize that in midlife, pasta is NOT your friend.

Any kind of starchy food causes weight gain and so it is really the time to start giving those things up.

But when it is something you love, I get it, it is not that easy.

Veggie pasta may not be exactly the same, but in this recipe I give you a thick, creamy, savoury sauce that is sure to fill you up and I think you are going to love it.

It is not like a regular salad that is for sure!

What I put in the salad:
Carrots
Zucchini
Green onions
Curry Nut Butter Sauce
1 Tbsp Nut Butter (almond butter, peanut butter, cashew butter, etc)
1 Tbsp Tahini
4 tsp water
2 tsp apple cider vinegar
1/2 tsp ginger powder
3 tsp Braggs soy (coconut aminos or tamari)
1 tsp curry powder
1/2 tsp curry powder
  • Add the nut butter and tahini into a small deep dish
  • Then add the water and stir until smooth
  • Add the other ingredients and stir until smooth
You can also put in a jar and shake well to mix.
